The strange thing about my love of no-bake cheesecakes is that I didn't have any recipes. So, when ever I wanted to make my absolute all-time favourite cake I had to flip through books and magazines... With the internet it became so much easier! This recipe is a very good one, and might be found on every cheesecake lover's blog!
Crust:
125 g crushed digestives (or other crackers, almond flour, chopped nuts or cookies...)
75 g unsalted butter (or if you like the saltiness, regular butter)
Filling:
300 g cream cheese (natural, preferably the fatty one)
60 g icing sugar
1 tsk vanilla sugar (or a quarter teaspoon of vanilla powder)
1 lime or lemon (shredded peel from the whole, and the juice from the half)
2,5 dl heavy cream
Optional: 1 handful newly picked elderflowers
Optional: 1 handful newly picked elderflowers
Serving:
Fresh strawberries.
Fresh strawberries.
Mix the crushed digestives (or the finely mixed cookies or crackers of your choice) with the melted butter in a mixer until it feels like wet sand. Press the mixture onto the bottom of a springform. Place it in the freezer until the cheese mix is ready.
Whip the cream cheese soft, and mix with sugar, vanilla sugar (or vanilla powder), lime (or lemon) rind and juice, and elder flowers. Whip the heavy cream until soft peaks form. Fold it neatly into the cheese mixture. Pour the cheese mixture into the springform, and spread it evenly. Place in the fridge for approximately 4 hours until settled. The heavier the cream, the shorter the time in the fridge.
